Soft sugar cookies are slightly crunchy on the outside and soft on the inside, with a hint of vanilla. They’re the ultimate comfort food! 

I’ve created my easiest soft sugar cookie recipe using oil instead of butter. That way, you don’t have to check your fridge for butter before making them.

These cookies are both economical and tasty. This oil-sugar cookie recipe uses seven simple ingredients that most people have at home.

  • all-purpose flour

  • vegetable oil
  • vanilla extract
  • eggs

These cookies are easy to make if you have all the necessary ingredients.

sugar cookie recipe without butter or oil tips- All of my cookies are baked on a Silicone Baking Mat like the one we got at Target. Not only does it keep your cookies from sticking, but it’s also super easy to clean.

I will never use a dirty pan or parchment again. I love my silicone baking mat, and my silicone muffin pans might be my favorite kitchen items. 

Don’t worry if your dough feels greasy. Your cookies will be delicious no matter what. 

Your hands will get a bit greasy when rolling your dough balls.

Cut the dough into small pieces (I like to use a tiny ice cream scoop for this) and roll them in sugar. This is the key to making perfect balls.

Don’t skip this step, even if it’s a bit of a hassle. It’ll be worth it in the end.

It’s also super important to take the cookies out of the oven when they’re still a little soft. As they cool, they’ll harden.

Again, don’t overbake these cookies!

These soft sugar cookies can be made in many different ways. Here are some of the most popular substitutions that people have tried that seem to work:

  • Using almond flour or gluten-free flour in place of all-purpose flour
  • Use rice bran oil, olive oil, or avocado oil in place of vegetable oil
  • Replacing the teaspoon of vanilla extract with 1/2 tsp of almond extract
  • If you have butter on hand instead of oil, you can use that instead. Just make sure it is soft or slightly melted.
